Honey Rose Matcha Chocolate Chip Cookies

Soft, rich, and lightly earthy from Honey Rose Matcha, these almond flour chocolate chip cookies are infused with functional mushrooms and filled with dark chocolate chips. A comforting treat with a subtle floral finish and the perfect companion to a hot cup of Motherbrew.

Ingredients:

  • 2¼ cups almond flour
  • 42 g Honey Rose Matcha
  • ¾ stick butter, softened
  • ¼ cup brown sugar, firmly packed
  • ¼ cup sugar
  • 1 tsp vanilla extract
  • 1 egg + 1 egg white
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup dark chocolate chips

Instructions:

Preheat oven to 350°F. In a large mixing bowl, whisk together the almond flour, Honey Rose Matcha, baking soda, and salt. Set aside.

In a separate bowl, mix the softened butter, brown sugar, sugar, and vanilla extract until smooth. Add the egg and egg white and stir until fully combined.

Pour the wet mixture into the dry ingredients and mix until a dough forms. Fold in the chocolate chips.

Scoop rounded tablespoons of dough onto parchment-lined baking sheets, leaving space between each cookie.

Bake for 12–15 minutes, or until the edges are lightly golden. Allow to cool slightly before transferring to a cooling rack. Enjoy!
